We are proud to say that our product has been backed up by Slow Food and Azaji We work trying to avoid the disappearance of this native product from the Jiloca Valley area, because the last years have been critical, and the future of saffron wasn’t promising. By contrast, and thanks to the members of Azaji, this spice that has coloured the lands of the valley for years is being planted again, giving the population of the region a mark of distinction and self personality.


Azafranes Jiloca is a family company that generation after generation is growing saffron in the Jiloca Region, where a unique saffron is produced due to its great quality, a product appreciated by chefs and housewives.
We belong to the Saffron Producers of the Jiloca Association (AZAJI), created in 2004 to defend and grow our beloved saffron. Apart from trading with our own production, we also pack the production of the other members of the association.


In 2004 The Saffron from the Jiloca Region is designated bastion of SLOW FOOD, an international organisation created in 1986 whose objective is to protect the pleasure of eating properly from the danger of homogenization that fast food means, It promotes the gastronomic culture, develops the education on tasting, keeps the agricultural biodiversity and protects all kinds of food in danger of extinction, They do so for everybody to enjoy good, clean and fair food.


This saffron is produced only in the Jiloca Region in Teruel, the best growing area due to its altitude and climatology that makes this spice top-quality.


We make it and pack it in a handicraft way for our customers to have all its aroma and great taste.
It can be used in soups, rice, fish, sea food and some desserts.

We’re talking about a natural product that has multiple qualities good for health as well as a nice flavour and a special colour It is anesthetic, aphrodisiac, acardiovascular protector, it reduces cholesterol, prevents miscarriages, calms cough and bronchitis, relieves colics and insomnia, it has antioxidant capacity and anticarcinogenic properties.
